NOTE:

Before you begin, make sure you’ve got cannabis‑infused butter, or a cannabis tincture (check out our Redecan CBD Reign Drops). If you’re looking for psychoactive effects, THC‑dominant cannabis is your best bet. Otherwise, CBD will do the job!

Double Chocolate Peppermint CBD Cookies

Uses: CBD Oil/ Tincture

Double chocolate peppermint cookies

What you need:

  • 1 1/4 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup dark brown sugar
  • 1/2 cup butter room temperature
  • 1/2 tsp peppermint extract
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1 1/4 cup semi-sweet chocolate chips
  • 4 crushed candy canes
  • 24 doses peppermint CBD oil optional
  • cookie icing optional

Instructions

  1. Mix the flour, cocoa powder, baking powder, baking soda, and salt in a medium sized bowl and set aside.
  2. In a stand mixer, mx the butter and sugar on medium-high until it’s fluffy. About 2-3 minutes.
  3. Add in the egg, peppermint extract, vanilla extract, and CBD oil to the stand mixer and mix for about 1 minute.
  4. With the mixer on low, add in the flour mixture a little at a time. Be sure to scrape the sides of the bowl and don’t add too much at once.
  5. Add in the chocolate chips and mix.
  6. Sprinkle a little bit of flour into the mixture if it’s too sticky and stir it up.
  7. Scoop the dough into balls and slightly flatter them on a baking sheet.
  8. Crush the candy canes and then press a little into each cookie.
  9. Bake at 340F for 8 minutes and then let cookies cool on a rack.
  10. Pour on the cookie icing if you want a little bit of added sweetness.

NOTE: Don’t bake the cookies for longer than 8 minutes. It’s the perfect amount of time for them to be gooey and chewy. They might look like they need another few minutes but they will cool into perfect cookies.

Cannabis-Infused Sugar Cookies

Sugar cookies

What you need:

  • 1 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon baking powder
  • Fine salt
  • 6 tbsp cannabis butter
  • 6 tbsp unsalted regular butter
  • 1 large egg, lightly beaten
  • 1 teaspoon pure vanilla extract

Instructions:

  1. In a food processor, combine sugar, flour, pumpkin pie spice, baking powder and 1/2 teaspoon of salt and pulse just to combine.
  2. Add both butters and pulse until all of the butter is incorporated into the flour and the mixture is sandy. Add the egg and vanilla and pulse until the mixture comes together in big clumps.
  3. Turn the dough out onto a clean work surface and knead a few times to form a ball.
  4. Divide the dough in half, pat into 2 discs about 1/4-inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  5. Position an oven rack in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  6. Put 1 disc of dough between 2 pieces of parchment paper and roll out the dough to 1/8-inch thick.
  7. Cut out with thanksgiving cookie cutters and arrange on one of the prepared baking sheets about 2 inches apart.
  8. Bake for 10 to 12 minutes.
  9. Once cool enough to handle, transfer cookies to a rack to cool completely.

Cannabis Snowball Christmas Cookies

Snowball cookies

What you need:

  • 1/2 cup unsalted butter
  • 1/2 cup cannabutter
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cup all purpose flour
  • 3/4 cup finely chopped nuts
  • You can use walnuts, pecans or even almonds depending on what you want
  • 1/4 teaspoon salt

Instructions:

  1. Heat your oven to 400 Degrees Fahrenheit.
  2. Mix the cannabutter and the regular butter as well as the 1/2 cup of powdered sugar along with the vanilla extract in a large bowl. Then stir in the flour nuts and salt until the mixture forms a dough that holds together.
  3. Now shape the dough into small 1 inch balls and set them about 1 inch apart on an ungreased cookie sheet.
  4. Once your oven is done preheating, bake the cookies for 10 to 12 minutes or until they set. Do not let them stay in long enough to brown, you only want them to set.
  5. Remove them from the cookie sheet and place them on a wire rack to let them cool slightly.
  6. Roll the warm cookies in powdered sugar and set them back on the wire rack. Let them cool and reroll them in the powdered sugar again.
